Banga Soup Recipe
Ingredients:
- Meat (1kg)
- Fresh prawn [oporo] (one cup)
- Medium-sized dry fish/smoked fish (1)
- Ataiko (1 tbsp)
- Oburunbebe stick (banga stick) (1)
- Irugege (1 teaspoon)
- Dried Beletientien leaves (half cup) or crushed dried Beletientien leaves (Atama leaf in Efik) or thinly sliced bitter leaves
- Thinly sliced bitter leaves (half cup)
- Periwinkles (1)
- Crayfish (half cup)
- Fresh palm fruits (banga) (8 cups)
- Red scotch bonnet pepper "ata rodo" (8)
- 3 cubes of Maggi
- Salt to taste
Directions:
Step 1: Start by grinding the spices. Combine Ataiko, Irugege, and a cup of Crayfish. Blend to a powder. Also, blend the red scotch bonnet pepper.
Step 2: Wash the dried or smoked fish and remove the center bones.
Step 3: Wash and precook the prawn with half a cup of water, a cube of Maggi, and a pinch of salt.
Step 4: Wash the meat properly and use two cubes of Maggi and a pinch of salt. Cook until tender, add salt to taste, and allow another three minutes. Set aside.
Step 5: Boil the palm fruit for 20 minutes, pound, transfer into a bowl, add water, and extract the juice. You'll need about 7-10 cups of thick palm fruit juice for this cooking.
Step 6: Strain the extract into your cooking pot, allow to boil for 15 minutes with the pot half-covered. It should be a lot thicker now.
Step 7: Add cleaned dried fish, ground (Crayfish, Ataiko, plus Irugege), Oburunbebe stick, precooked meat, ground pepper, and salt to taste. Cover and allow another 10 minutes.
Step 8: Add crushed dried Beletientien leaves or thinly sliced bitter leaves, precooked prawn, periwinkles, and one cube of Knorr. Stir, cover, and allow simmering for 3 minutes.
Step 9: Serve with starch, Eba, or Fufu.
